ANZAC Biscuits


"My Auntie Robyn's recipe - the more boiling water added the flatter the biscuits"

1 cup SR flour
1 cup sugar
1 cup rolled oats
1 cup desiccated coconut
125g butter, melted
1 Tbsp golden syrup
2 Tbsp boiling water
1 tsp bi-carb soda

Preheat oven to 180c and line a biscuit tray with baking paper.
Sift the flour and place all the dry ingredients into a basin and mix thoroughly
Add the melted butter, golden syrup and the *boiling water (to which the bi-carb has been added).
Mix together and place spoonfuls of mixture onto the biscuit trays.
Bake until brown, appox 10mins

* if you add 4Tbsp of boiling water instead of 2 and an extra tsp of golden syrup, the biscuits will be flatter and softer. Please remember to allow extra room for spreading.
