INGREDIENTS
250g arrowroot biscuits, crushed
1 cup dried apricots, diced
200g marshmallows (pink and white), chopped
3/4 cup diced almonds (optional)
395g can sweetened condensed milk
1/2 cup shredded coconut
METHOD
Place the biscuits in a food processor and process until crushed.
Combine the crushed biscuits, dried apricots, marshmallows, nuts and
condensed milk in a large bowl.
Place a large sheet of non-stick
baking paper on a flat surface and sprinkle 1/2 the coconut over the
sheet. Shape half the mixture into a thick log (approx 5cm in diameter),
coat in the coconut and roll up in the baking paper and twist the ends
to tighten. Repeat with the other half of the mixture. Refrigerate for 2
hours or until firm then unwrap and cut into slices to serve.
Note: If you wrap the logs in foil you can store them in the freezer until required. Then just defrost, unwrap, cut and serve :o)
