Jelly Slice

"This is one recipe that is loved by nearly everyone, change the jelly to blue and make Smurf Slice"

Preparation time: 20 minutes
Chill Time: 4 hours, best overnight

INGREDIENTS
250g crushed plain biscuits (Milk Arrowroot, Marie)
185g butter, melted
1 x 395g can condensed milk
juice of 3 lemons (must be ripe)
4 tsp gelatine
1 pack jelly crystals (raspberry or strawberry are the best)
boiling water

METHOD
Line the base of a slice pan (approx 16cm x 28cm x 4cm) with non-stick baking paper.
Combine crushed biscuits and melted butter together then press into the prepared slice tin.
In another bowl dissolve gelatine in 3/4 cup of boiling water, when dissolved, add condensed milk and lemon juice and beat with an electric mixer for approx 1 minute, until combined. Pour over biscuit base then place into the fridge for at least 2 hours, or until firm.
Prepare jelly by mixing with 1 1/4 cups of boiling water, then set aside to cool. Carefully pour cooled jelly over the top of the condensed milk mixture, then place back into the fridge for a further 6-8 hours, or overnight, until jelly has set completely.
Use a sharp knife to cut into slices and serve.
