"Mum made these biscuits for us on a regular basis when we were kids"

Makes: 30 Biscuits

INGREDIENTS

285g SR Flour
115g room temperature butter 
115g sugar (+ extra for coating)
2 eggs

METHOD

Preheat the oven to 180c

Rub the butter into the flour (until it resembles breadcrumbs), then beat the eggs and the sugar together and add it to the flour mixture and mix until combined.

Take walnut size spoonfuls of dough and drop them into the extra sugar then roll into a ball and place on a tray lined with baking paper.

You then can either flatten the balls with a fork slightly and bake them as a plain biscuit or use the end of a wooden spoon to make an indentation in the top of the ball and drop a small amount of your favourite jam into the hole.

Bake the biscuits for 15 mins or until the edges are slightly gold in colour.
