Tuna Patties

Tuna Patties

"An oldie but a goodie - great served cold the next day in a sandwich"

INGREDIENTS
400g potatoes, peeled and cut into chunks
420g can of Tuna chunks in brine (or salmon)
10g butter
1 large egg
2 tsp chopped spring onion
1 tsp chopped chives
1 Tbsp cream
1 small can of corn
1 Tbsp oil (for frying)

METHOD
Cook the potatoes in lightly salted water
Once cooked, drain and mash with the butter.
In a large bowl add all remaining ingredients (except the oil) and mix together until combined.
Allow, the mixture to cool enough to be shaped by hand
Once cooled, shape patties into balls approx 8cm in diameter and then squash into a pattie shape
Once they are all prepared add the oil to the pan and fry for a couple minutes each side.

ALTERNATIVES
The patties can be rolled in breadcrumbs prior to frying.
