Vanilla Slice

Vanilla Slice

This is my Mum’s recipe and it is the best!

*Must be made the night before*

INGREDIENTS

1 Packet of SAO biscuits

CUSTARD:
2 cups full cream milk
1/2 cup vanilla custard powder (not instant)
600ml thickened cream
1/2 cup sugar
2 tsp vanilla essence

ICING:
margarine (approx 1 tsp)
icing sugar (approx 1 cup)
milk
dash of vanilla essence (optional)
desiccated coconut (optional)

METHOD

1. Mix the custard powder, sugar and 200mls of the cream, mixing until all the custard powder has dissolved. Add the remaining cream and all the other ingredients and stir through.
2. Microwave on high for 7 mins then stir and microwave again for a further 7 mins. When stirred, the custard should be a thick, smooth, pourable consistency.
3. Lay the SAO biscuits in a slice tray approx 30cm x 20 cm (bumpy side up), cutting the biscuits to fit if required, leaving 2-3mm between each biscuit as they will expand overnight.
4. Gently pour the custard over the biscuits and place another layer of biscuits on top (bumpy side down) and allow to set overnight (do not cover).

Following day - To make the icing, put the margarine and icing sugar in a bowl and add a little milk and stir. Continue adding milk until the icing is a thick spreadable consistency (like peanut butter :o).

Spread over the slice and sprinkle with coconut, allow the icing to set before cutting.

NOTE: The microwave time was based on a 1000W microwave. When finished, if you find your custard is too soft, you need to increase your cooking time. If you find your custard is too rubbery, you need to decrease the cooking time.
