This is my Mum’s recipe and it is the best!
*Must be made the night before*
1 Packet of SAO biscuits
2 cups milk
1/2 cup custard powder
1/2 cup sugar
2 tsp vanilla essence
margarine (approx 1 tsp)
icing sugar (approx 1 cup)
Mix the custard powder, sugar and 200mls of the cream, mixing until all the custard powder has dissolved (no little yellow specks :o). Add the remaining cream and all the other ingredients and stir through.
Microwave on high for 3 mins then stir and microwave again for a further 3 mins, continue this process until the custard thickens (approx 9-12 mins). The custard should be a thick, smooth pourable consistency (do not over cook as custard will go rubbery)
Lay the SAO biscuits in a slice tray approx 30cm x 20 cm (bumpy side up), cutting the biscuits to fit if required, leaving 2-3mm between each biscuit as they will expand overnight.
Gently pour the custard over the biscuits and place another layer of biscuits on top (bumpy side down) and allow to set overnight.
To make the icing, put the margarine and icing sugar in a bowl and add a little milk and stir. Continue adding milk until the icing is the consistency of thickened cream.
Spread over the slice and sprinkle with coconut, allow the icing to set before cutting.
