This is my Mum’s recipe and it is the best!
*Must be made the night before*
1 Packet of SAO biscuits
2 cups milk
1/2 cup custard powder
1/2 cup sugar
2 tsp vanilla essence
margarine (approx 1 tsp)
icing sugar (approx 1 cup)
Mix the custard powder, sugar and cream to form a smooth paste. Add other ingredients and stir through.
Microwave on high (1000w) for 3 mins then stir, microwave again for a further 3 mins and stir again. Continue this way until the custard becomes a thick, smooth pourable consistency, approx 9 mins (do not over cook as custard will go rubbery)
Place a layer of the biscuits, bumpy side up, in a slice tray approx 30cm x 20 cm (biscuits may need to be cut to fit).
Gently pour the custard over the biscuits and place another layer of biscuits on top (bumpy side down) and allow to set overnight.
To make the icing, put the margarine and icing sugar in a bowl and add a little milk and stir. Continue adding milk until the icing is the consistency of thickened cream.
Spread over the slice and sprinkle with coconut.
Don’t put your SAO’s too close together as they will expand, leave a few mm in-between each biscuit.
