I saw this in Pinterest and had to try it. It’s easy to make and delicious!
*Preheat your oven to 230ºC*
½ dijon mustard
1/4 cup of maple syrup
1 Tbsp of rice wine vinegar
Salt and Pepper to taste
Fresh Rosemary (optional)
700g chicken thigh fillets
Mix together the dijon mustard, maple syrup and rice wine vinegar
Put chicken thighs into a foil-lined, oven-proof baking dish and season with salt and pepper.
Pour your maple mustard mixture over them, turning the thighs in the mixture so they are fully coated.
Put into the oven, and let them bake for 40 minutes basting the tops of the chicken with the sauce half way through.
Remove from oven and leave to rest for 5 minutes before serving.
Serve on mash potato or rice, making sure to spoon some extra sauce over the top and sprinkle over some fresh rosemary.
